William Curley snaps up trophy for wine and dessert match

William Curley Dessert Bar in London has won the fourth edition of the Wines of Roussillon Dessert Trophy European final, which took place in Perpignan.

William Curley Dessert Bar in London has won the fourth edition of the Wines of Roussillon Dessert Trophy European final, which took place in Perpignan.

Pâtissier Sarah Frankland and sommelier Robert Giorgione took first prize for their dessert of apricot, pistachio and chocolate pavé paired with Domaine Fontanel Rivesaltes Ambré 1999.

The duo were representing the UK and they beat four other European finalist teams, including Germany, Belgium, Denmark and the Netherlands. Having won regional heats in their respective countries, all teams travelled to France to participate in the five-hour competition final at the Ecole Internationale de Pâtisserie d'Olivier Bajard in Perpignan.

The competition challenges a sommelier and pastry chef team to create the ultimate dessert (this year using dried fruit and/or honey as the base ingredient) and Roussillon Vin Doux Naturel combination. Competitors are able to choose a wine from AOC Banyuls, Banyuls Grand Cru, Maury, Muscat de Rivesaltes and Rivesaltes to pair with their dessert. Points are awarded on the team's research into the Roussillon area, their technique, the match between the dessert and wine, the explanation given to the pairing, the presentation of the dessert and its originality.

Eric Aracil, export manager for the Conseil Interprofessionnel, said: "The team excelled in achieving harmony in every component of their dessert, from the pairing of the ingredients to the stunning flavour combinations and colour hues."

The judging panel was made up of sommeliers, pastry chefs and wine experts, including Sarah Jane Evans MW.
