Specialist Champagne restaurant set to open in City of London

A new restaurant which claims to have one of the largest selections of Champagne and sparkling wine by the glass in London is set to open in the City at the end of November.

Tirage hopes to bring a combination of specialist Champagne restaurant with informal dining based around sharing tasting plates. Based in Bishopsgate, Tirage is a new restaurant concept from Venezuelan-born businessman-turned-restaurateur Elio Machillanda and his wife Claudia, who have brought in Michelin-starred restaurateur David Moore of Pied à Terre background in an advisory role.

Head sommelier of the project is Roberto Della Pietra, who has worked in a number of top London establishments including Roussillon Restaurant, Gauthier Soho, and L'Ortolan. He has pulled together a 120-strong sparkling wine and Champagne list. Champagne Perrier  Jouët has been chosen as the house Champage, but there is also a strong focus on lesser-known grower Champagnes and rare varieties. Each day 15-18 different labels will all be available by the glass, increased to as much as 30 by Christmas. Customers will also be able to buy Champagnes and sparkling wines to take home.

The food is based on tasting plates, food flights and platters and brings together French cuisine and Peruvian dishes. There will also be a retail element, allowing customers to buy their preferred bottles to take home with them.

The 4,201 sq foot site, will have 154 covers across two floors, including two private rooms (one sponsored by Perrier Jouët) and three semi-private areas.
