Diageo World Class panel reveals top cocktail trends

Leading mixologist and chefs have highlighted four trends that will change the way consumers drink cocktails in 2018.

During a World Class trend panel at the Diageo World Class Bartender of the year Final in Mexico City this week Diageo global Cocktailian Lauren Mote led a panel discussion including mixology legend Dre Masso; Australian MasterChef host and judge Matt Preston; Alex Kratena (formerly of Artesian – three time winner of World’s Best Bar) and the Diageo Bartender of the Year winner 2014, Charles Joly.

The first trend discussed during the panel was Sustainable Serves. In a recent consumer poll, nearly one in two customers expressed a willingness to pay a 10% premium for goods produced in an environmentally and socially responsible way.

Ryan Chetiyawardana, from Dandelyan in London said this approach has cut the waste at his venue by as much as 75%.

Dre Masso said “The world is waking up to the impact that their choices have both on their bodies and the environment. Sustainable and re-useable methods and ingredients are becoming increasingly important. The mixologists who embrace this new reality are the ones who will flourish.”

The second trend was Signature Serves such, the Bellini in Venice in the 1930s which was created by Giuseppe Cipriani at Harry’s Bar.

“The world's best bars are already established destinations for drink savvy travellers,” said Kratena.

“In 2018 I expect to see increasingly more switched-on bar operators and talented bartenders creating unique drink experiences that go beyond 'what's expected' and push signature serves to become the answer to what tasting menus are in the restaurant world.'

The third trend discussed was the Culinary Cocktail, incorporating elements of food in cocktials.

During the debate Preston said: “With the rise in the last decade or so of celebrity chefs and the increased interest in cuisine, the most enlightened mixologists will explore and experiment with flavours, textures, ingredients and techniques borrowed from their peers in the world of fine dining.”

The last trend was drinking Cocktails at Home.

Research indicates that 73% of younger drinkers enjoy cocktails at home on special occasions.

Joly said: “I love seeing people develop into passionate cocktail enthusiasts. Rather than just cracking open a bottle of wine when guests arrive, it’s the logical next step for cocktail lovers to be able to craft beautiful cocktails at home when entertaining friends and family.”

This morning, Canada's Kaitlyn Stewart was named the winner of Diageo's World Class Bartender of the Year 2017 in Mexico City.
