Official launch of ‘maximum bubbles, zero waste’ fizz preserver

A Champagne and sparkling wine preserver that promises to keep fizz in optimum condition for up to four weeks has been officially launched to the on-trade following a trial in a selection of high end restaurants.

The Genii system, which has been trialled by Trinity, 67 Pall Mall, Gordon Ramsey and The Ledbury over the last few months, has been designed to stop oxidisation from occurring naturally and safely by adding CO2 gas back into the bottle.

The technique would enable users to “confidently open and serve by the glass” reassured that its fizz and flavour would be maintained down to the last drop as if the bottle had never been opened, said Ingenuity Group - the brainchild behind the launch.

“The Genii is comprised of a universal cap, which once secured to the bottle, is docked with a hand-held charger that re-pressurises the bottle to three bars, with the unique design of the cap allowing the oxygen in the headspace of the bottle to be evacuated whilst 100% inert gas is introduced,” said the business.

The “unique technology” was expected to “revolutionise” ‘by the glass’ sales of Champagne and sparkling wines in the on-trade, enabling a greater variety of wines to be made available while improving margins by minimising wastage, it added.

Launched following two years of “rigorous development and independent laboratory trials”, The Genii had received “overwhelmingly positive feedback” from the trial restaurants, it said. 

James Lloyd of Gordon Ramsay Restaurants said: “There has always been a lack of a proper preservation system for Champagne and sparkling wines thus leading to significant wastage. Since using The Genii system we have been able to keep and preserve our open Champagne, served by the glass, fresher for longer and importantly it is extremely easy to use and minimises wastage.”

The Genii is now being released to the on-trade at a price of £330.00 (ex VAT and delivery), including three universal caps, one hand held charger and 10 CO2 gas cartridges.
