Ex-Nobu head chef opens Wabi in Holborn

A second branch of Japanese restaurant Wabi has opened in Holborn, London.

 

The first is in Horsham, West Sussex, and it is the brainchild of Scott Hallsworth, who was head chef at Nobu.

 

The new venue features a restaurant, cocktail lounge, sushi bar, private dining room and outdoor terrace.

 

Dishes include tea-smoked pork scratchings with pickled wasabi dip, kombu-roasted Chilean sea bass with spicy shiso ponzu; and  Wagyu and foie gras  gyoza with goma ponzu.

 

The wine is listed by varietal and the menu also features sake and Japanese beer. The cocktail menu includes the Emperor’s Mandolin: Mandarin Napoleon, Limoncello, Lillet Blanc, yuzu juice, lemongrass and shiso topped with  Champagne and Wild Serenity: vodka, wasabi, ginger, St Germain, fresh apple juice, cardamom and lemon.
