New vacuum system for wines by the glass

Small- and medium-sized businesses in the on trade now have an affordable way of preserving wines sold by the glass, a company is claiming.

Waiter's Friend says its new, low-cost PresorVac will help solve the problem faced by many bars and restaurants of keeping wine fresh once opened, forcing many to limit the wines they sell by the glass.

Wine-by-the-glass sales are expected to be one of the largest growth areas in the UK this year, according to on-trade industry research.

Many establishments do not use vacuum systems to keep wine fresh due to high costs, as systems can run into thousands of pounds, claimed Waiter's Friend.

Its PresorVac system costs £274, against more than £2,000 for some other systems on the market.

Paul Fenner, Waiter's Friend managing director, said: "Even small operators can up the quality and range of wines they offer, eliminating wastage and seeing an immediate return for modest outlay. And that means increased sales for the wine trade too, potentially from every account on their books."

Clare Young, managing director at Vintellectual, a consultancy and training organization, said: "We need to offer people more choice and that means more wines by the glass."
