London’s grande dame hotel The Savoy is set to open Beaufort Wine Bar this October as the historic hotel’s “dedicated wine discovery destination”.
The project is being led by head sommelier Romain Audrerie (pictured, right) who will be charged with championing a list that contains 250 wines from 18 countries.
Back vintages spanning from 1975 to 2025 will be found on the list and the wine-led ethos of the venue spans to its spirits offer too – grape-based spirits Cognac, Grappa and Pisco form the foundation of wine-based cocktails on the menu.
Prior to his role at The Savoy Audrerie was part of the opening team at Chiltern Firehouse, rising to the role of global wine director within André Balazs Properties.
He will be in charge of what the hotel touts to be one of the largest by-the-glass programmes in the UK, utilising Coravin technology to curate this offer.
It will be a more relaxed bar among the hotel’s venues and have a varied food proposition. This includes table side Jamón Ibérico carving, served alongside British cheese. Hampshire trout served with Dorest Wasabi exemplifies this local produce focus.
